After the oil is rasped and the juice is extracted from
the fruit, the remaining peel portion (mainly the white “albedo” portion) is dried with heat to remove the moisture to a content of 8 – 12%. This dried albedo contains more than 30% pectin, making it an excellent source of pectin or fruit fiber. The product is completely devoid of essential oil, so it has no odor of Lemon.
Since our dried Lemon Peel is used for further processing or in commercial food applications, consistency of product is crucial.
We can guarantee particle size to very stringent specifications, a complete absence of essential oil,
and rigid microbiological control.
