Dehydrated Lemon Peel is obtained after the oil is rasped and the juice is extracted from the fruit. The remaining peel portion (mainly the white albedo portion) is dried with heat to remove moisture, and this dried albedo contains more than 30% pectin, making it an excellent source of fruit fiber.

 

Dried Lemon Peel is used for further processing or in commercial food applications. We guarantee particle size in the micro range, a complete absence of essential oil, and microbiological quality.
